On my right foot i have a tattoo of the word “gaudeo”. This is latin for ‘I rejoice’ and today i feel joyful. 

Began my day with a hefty green smoothie jam packed with cucumber, sprouts, cabbage and fruit. Then launched straight into preparing tonights dinner for mr veg and I: eggplant and zucchini layerbake with pinenut cream. It is a thing of wholesome beauty although i suspect that describing it as ‘layered’ may be a little grandiose because i began to prepare it in an oven dish that was way too small.  So i made the fatal error of transferring … Oh yes error it was because now my pinenut cream topping hides what can at most be described as a mess of eggplant, potato, zucchini and tomato sauce! Still it will taste the same, right??

That said such a kitchen crisis would have sent me reaching for the gin a few weeks back whereas today i just shrugged it off. And that, as they say, is progress! Perhaps my new lifestyle and my ultra strength vit b complex are starting to kick in. Time will tell …

Today’s mantra: Everyday brings me the chance to start afresh
Today’s juice: carrot, apple, pear, peach, plum, apricot, plum, ginger and spiruluna. Yum!

However … I must confess to having eaten some chicken last night when mr veg took the girls and i out for tea. I felt TERRIBLE afterwards but was gently coached back to the land of the less remorseful by my twelve year old vegi daughter who reminded me that tomorrow is always a new day and a fresh start. Pearls of wisdom indeed!

After a monster battle of “Beach Tent vs Wind’, the girls emerged victorious. So an afternoon at the beach is in order . Sun is shining, girls are playing in the waves on their boogie boards and I have a sense of wellbeing. This is, indeed, the life!

I have begun my day with another Green Juice!  Not one to do things by half, I am following Kris Carr’s advice and starting the day with a green kick up the backside in the form of a hefty glass of vegetable juice.  Ok, ok so I did sneak some banana, blueberries and apple juice in there but couple those sweeties with cucumber, Kale, celery and ginger and chuck in some spirulina for good luck and surely you have the makings of a great day.  I don’t know about you but I can positively feel myself radiating.  Although I worry that any radiance may actually just be a biproduct of Smugness at how wholesome and healthy I am being!?

I have also been ‘researching’ (also known as wasting ridiculous amounts of time bookmarking pages on the Internet) and spent the evening reading The Complete Book of Raw Food (edited by Lori Baird).  Whilst I am incredibly drawn to this lifestyle, I am just not ready to go there yet.  Baby steps, baby steps.  Good book though and I quite fancy trying to make some of the nut cheeses at some point.

Food check:  dinner last night with Mr Veg and my two girls was spinach wraps with babaganoush, stirfried vegetables and some sesame miso dressing!  Am determined to shop at the asian grocers as much as possible, not just because it saves a whole heap of dosh which I can then spend on the FUN stuff but also because shopping there makes me feel all NYC and Urban chic so bring it onnnnn!

The Picture?  Yes it is Buddha chillaxing in my front garden and enjoying the sunshine.

What I will be made of by December 2012!!

You are what you eat…..

Ok so I know that it is the new year and like many others this is the year that I am going to get well, eat less of and more of and generally become a different person to the one that I was three weeks ago.  It all sounds so cliched and unoriginal, right!  And yet despite all that, we are now a full three weeks headlong into the beautiful 2012 and I still feel enthusiastic about my decision to cut meat from my diet and gradually reduce dairy, fish and all animal products.

So what is my vision?  By Christmas, I will have avoided all meat products for the whole year, I will have reduced my dairy intake (including my beloved eggs) and I will be radiantly living on a wonderful largely vegan diet.  My skin will be radiant, my body will be lean and I will feel energised and altogether better.  Easy peasy lemon squeezy!

And it was indeed a rocky start when my partner in crime, Mr Vegophile, announced that he was going meat, dairy, fish, sugar and salt free, after watching Caldwell Esselstyne on YouTube.  My response??  Well ‘resistant’ might be appropriate..  Hostile??  Stubborn??  Suddenly I found myself peddling all the carnivore excuses I could muster, ending with the plaintif cry of ‘What about the protein?’  But I am over that now, largely due to the fact that while Mr Esselstyne( much respect to the man) is a wonder, I just don’t see him as the lind of lifestyle brandleader that I can muster up enthusiasm over.  And so off I galloped to Google and got me a guru. 

And the winner is ….. drum roll…..Kris Carr in this case.  I have been poring over her website with gluttonous pleasure.  Perky and heroic, kind and inspiring.  Yes this is the leader for me.  So the books are ordered and hopefully they will soon arrive to fill me with joy and hunger pangs for my new Wellness diet.

And you the reader will be there to help me along the way. I will search out books, apps, websites, cafes, magazines.  You name it!  Immersion is the key and I will Immerse!  So whilst there may be trouble ahead but while there’s moonlight and music and love and romance, let’s make some hummus and dance!
